Penderyn AC Madeira

Dags för en ny recension av whisky. Denna gång blir det en serie av tre där jag kommer att testa en mycket ung "Walesisk whisky" i de tre uttryck som de lanserar nu från början på världsmarknaden. Börjar här med Madeira cask för att i nästa gå vidare med sherry cask och peated.

I slutet på 1800-talet stängde det sista destilleriet i norra Wales och det skulle dröja 100 år innan Wales fick uppleva nyproducerad whisky igen. 1998 startade fyra privatpersoner Welsh Whisky Company och köpte utrustning från ett stängt destilleri.

Platsen för destilleriet blev i byn Penderyn i utkanten av Bretons Beacons nationalpark. Tillgången till vatten av mycket hög kvalité sägs ha varit ett av de tyngsta skälen till att förlägga destilleriet där.

En kopparpanna skapades enligt ett eget koncept för att särskilja sig från Irland och Skottland. Dr David Faraday specialdesignade pannan så att destilleringsprocessen endast sker i en panna till skillnad från Skottlands två och Irlands tre. De första stegen i whiskyproduktionen med mältning och mäskning sker inte på destilleriet utan det köps från ett bryggeri i Cardiff, Brains Brewery.

Processvattnet som håller hög kvalité tas lokalt och har runnit genom röd sandsten och kalkstensgrottor.

Brains bryggeri i Cardiff förser destilleriet med mäsk enligt tydliga specifikationer. Huvuddelen är orökt men en mindre del röks lätt till vissa specialutgåvor. Fördelen med att ta mäsken från bryggeriet är att det håller god kvalité och att de kan fokusera på destilleringsprocessen.

Penderyn har endast en panna där destilleringen recirkulerar några gånger. Spriten går upp i halsen och vidare i "lyne arm" samt in i ett invecklat system av 24 "plates" där spritpartiklarna kondenseras och återdestilleras två till tre gånger. Här kan även destilleriet variera när och hur mycket som destilleras.  Den komplexa destillationsprocessen ger, hos Penderyn Distillery, en mycken ren och elegant whisky med en hög styrka på nydestillatet, över 80%. Destilleringen tar cirka åtta timmar. Kapaciteten är 2.500 liter.

Whiskyn lagras på bourbonfat från Jack Daniels och Evan Williams. En mindre del lagras i sherry, madeira och ungerska vinfat. Standardutgåvan från destilleriet kommer även framöver att vara efterlagrad på madeirafat.

Den speciella formen och konstruktionen på pannan ger en whisky som mognar snabbt. Destilleriet menar att de ämnen som måste mogna länge i skotsk whisky överhuvudtaget inte finns i Penderyns.

Whiskyn är inte kylfiltrerad då den anses vara så "ren" att det inte behövs. Buteljeringen sker på destilleriet. 

Nu till Recensionen: 

Doft: Russin, Aprikos, Mandarin, persika, lätt doft av hav och stekt flundra? och gräs
Med vatten: Nyslaget gräs, fat, mandarin, lätt gräddkola.

Smak: Fruktig, aprikos, persika, lätt smak av färsk ek, fruktvin, sälta
Med vatten: lite unken smak men det flesta av smakerna finns kvar förutom färsk ek


Eftersmak: Lite kryddig, sälta, lätt rök, aprikos- och persikosmaken håller sig kvar länge tillsammans med den lätta röken.
Med vatten: Mer kryddig, mer sälta, mer rök men mindre av allt det andra.


Kommentar: Hyfsad. Lite som ett fruktvin men skippa vattnet.

Time for a new review of Whisky. This time it will be a series of three where I will test a very young "Welsh Whisky" in the three expressions as they now launching initially on the world market. Begins here with the Madeira cask and I will proceed with sherry cask and peated.

In the late 1800s shut the last distillery in North Wales and it would take 100 years before Wales experienced newly produced Whisky again. In 1998, four individuals founded the Welsh Whisky Company and purchased the equipment from a closed distillery.

The location of the distillery was in the village of Penderyn in the outskirts of Breton Beacons National Park. The availability of water of very high quality is said to have been one of the main reasons to locate a distillery there.
A copper still was created as a separate concept to distinguish itself from Ireland and Scotland. Dr. David Faraday specially designed the still so that the distillation process only takes place in one still, unlike Scotland and Ireland, two three. The first steps in Whisky production of malting and mashing is not at the distillery, but it is purchased from a brewery in Cardiff, Brains Brewery.

The process water that is of high quality are locally and has run through the red sandstone and limestone caves.

Brains Brewery in Cardiff provides the distillery with the mash according to clear specifications. Most are unpeated but a small part are peatsmoked easily for some special editions. The advantage to take the mash from the brewery is that it is of good quality and that they can focus on the distilling process.

Penderyn has only one boiler in which distillation circulates a few times. The liquor is fed up and further in "Lyne arm" and into a complex system of 24 "plates" where liquor particles condense and re-distilled two to three times. This can also vary the distillery when and how much is distilled. The complex distillation process gives in Penderyn Distillery a lot of clean and elegant Whisky with a high strength the distillate have a streth of over 80%. The distillation takes about eight hours. The capacity is 2500 liters.

The whisky is stored in bourbon casks from Jack Daniels and Evan Williams. A small part is stored in sherry madeira and Hungarian wine barrel. Standard Edition from the distillery will continue to be finnished in the madeiracasks. 

The special shape and design of the boiler provides a whisky that is maturing rapidly. The distillery says that the subjects that have to mature a long time in the Scotch is not in Penderyn at all.

The whisky is not chill filtered when it is considered as "pure" that it is not necessary. Bottling is done at the distillery.

Now to the review:

Nose: Raisins apricots Mandarin peach, light scent of sea and fried flounder? and grass 

With water: freshly mown grass, cask, mandarin, light toffee.

Palate: Fruity, apricot peach, light taste of fresh oak, fruit wine saltiness 

With water: a little stale taste but most of the flavors are left apart from fresh oak

Finish: A little spicy, salty, light smoke, apricot and peach stick around long with the light smoke. 

With water: more spicy, more salt, more smoke and less of everything else.

Comment: Decent. A bit like a fruit wine, but skip the water.
